Cheese Quesadillas
Two 6" inch tortillas
1 tsp olive oil
2 tbsp chopped green onion
1/4 cup chopped green pepper
2 oz shredded marble cheese
Preheat oven to 350 degrees. Lightly brush one side of each tortilla with olive oil. Place one tortilla oil-side down on a cookie sheet. Spread green onion, green pepper, and marble cheese over tortilla. Cover with other tortilla, oil side up. Bake for 5 - 10 minutes. Remove, cut into wedges.
Serves 2

Chicken Fingers
4 oz boneless, skinless chicken breast
1/2 cup Corn Flakes
1 large egg white
2 tbsp fat-free salsa
Preheat oven to 350F. Cut chicken into strips. Finely crush Corn Flakes in a food processor. Coat chicken strips in egg white then roll in Corn Flake crumbs. Arrange chicken strips on a nonstick baking sheet and bake for 20-25 minutes. Serve with salsa for dipping.
